I started a website for my family's small Jewish Deli in Lowell, MA. Since it is a small business, we figured we could get away with using Shared Hosting. Withing a month the website took off. People were using the website to view our menu and website traffic was up to thousands of hits per week. Naturally, the shared server was often down, during peak dinner time hours, so we had to switch hosts to dedicated hosting. Now our website is the primary source of our business, and our clients love it.

I agree with the summarizes listed above, I'd add to the list "managed" hosting, which could fall somewhere within each category.
Of all the categories listed, I tend to fall more towards the dedicated/managed scene. When you have your own physical server , like the folks at IronScale do (www.ironscale.com), that at the end of the day, is really the better bang for the buck). True every environment is different, but IronScale has given me complete flexibility to manage my environments and there aren't any hidden charges.
